    Cooking is my main go to cookbook.  Not only does it have many fine recipes it also has sections about foods, equipment, cooking methods and includes a good substitution table.  The original version was written back in the thirties and it is an American Classic.  They have a great web site I just visited.  My 13th edition was the book that really taught me how to cook and I used it again last night because I can never remember the exact temperature and timing for roasts.
