don't necessarily have to have chemicals in them. I get organic box mixes. I haven't seen an organic frozen whipped topping, but you can always make whipped cream yourself.

    Thank you for your input.

looked at several organic cake mixes.  They all use enhanced whole wheat flowers -- which means the flour is enhanced with chemicals -- once being niacin which is a petroleum byproduct (crud from the pipes) and most made in China.

The only way to get as close to good quality control in your kitchen is to make everything from scratch -- flours from a place like Bob's Red Mill.  You can achieve a moist cake without the pudding mix.  And then the ingredients in Cool Whip:

Here’s a rundown of what’s inside the Original Cool Whip: Water, hydrogenated vegetable oil, high fructose corn syrup, corn syrup, skim milk, light cream and less than 2% sodium caseinate (a milk derivative), natural and artificial flavor, xanthan and guar gums, polysorbate 60, sorbitan monostearate and beta carotene (as a coloring).

commercialized products aren't similar to ... well, other commercialized products.

Cake Mix, by the way, is flour, baking soda, baking powder or other leavening, and a bit of salt. To make it yellow, one needs either artificial food coloring or a few drops of carrot juice.

It is, in fact, cheaper and better to mix the flour, leavening, and salt from scratch. Orders of magnitude cheaper, in fact. Plus you can control how much salt and what other chemicals (example: aluminium-free baking powder, should you so choose) are in your finished goods.

Instead of instant pudding mix, add either a half-cup applesauce or an extra beaten egg to your cake batter. Presto: moisture that stays!
