    It is really good... I just had a couple of squares! (And I'll admit that I messed with the recipe a little bit...no butter... Still, it was delicious.)

    Sweet Potato and Apple Kugel

    4 eggs
    Salt to taste
    2 large sweet potatoes (1 3/4 to 2 pounds total), peeled and grated
    2 slightly tart apples (I use Granny Smith, unless I can find Braeburn) peeled, cored and grated
    1 tablespoon fresh lime juice
    1 tablespoon mild honey
    3 to 4 tablespoons melted unsalted butter, but butter is not necessary (it’s really to brown
    the top, which doesn’t make much difference, IMHO.)

    1. Heat the oven to 375 degrees. Add cooking spray to a 2-quart baking dish.

    2. In a large mixing bowl, beat the eggs with salt to taste (I suggest about 1/2 teaspoon). Add the grated sweet potatoes and the apples. Whisk the honey into the lime juice, and add to the mix, then stir everything together.

    3. Transfer the mixture to the prepared baking dish. Cover the dish tightly with foil and place in the oven. Bake 45 minutes. Remove the foil and brush the top with melted butter, if using. If not, remove foil and bake for another 15 to 20 minutes or longer. The kugel is ready when the edges are browned, the top is browned in spots and the mixture is set. Remove from the heat and allow to cool for 10 to 15 minutes before serving.

    They recipe says the yield is 6 servings, but I cut it up into 2” squares - better for snacks.
