  •  my new lazy, tasty, healthy veggie mix: (4+ / 0-)

    squash (remove stems & seeds), carrots(slices smaller than the rest), sweet potatoes, turnip (sliced smaller than the rest), zucchini -- cut into 1 inch cube sizes, toss in olive oil/salt/pepper.  Bake for 15+ minutes at 400.  Might need another 5 minutes, depending on your oven.  

    Optional, in the last 5 minutes or so, toss in a handful of cherry tomatoes (too much longer and they overcook into sad, dead killer tomatoes).

    Try not to eat the pounds of veggies all at once!  Soooo tasty.
