    that's what I learned in ice cream making. I got the Oster model where you freeze the canister beforehand and it makes soft ice cream in 10 to 15 min, freezing makes them harder. Anyhow, I was looking for recipes and tips and saw that. I do a custard type because it's more creamy and doesn't have the graininess (from ice crystals) of ice cream made without eggs. Alcohol prevents, or reduces those ice crystals, supposedly. Never tried.  

    After experimenting with various numbers of eggs (just yolks),  I settled on 2, 2 cups heavy cream, 1 cup whole milk, 3/4 cup sugar, and vanilla. Creme Anglaise before it's frozen, really.
