    full of water in the bottom of the oven, during pre-heat.

    It helps to have some steam in the oven when making sourdough.

    Today I'm baking pretzels - a little more sugar and you have to boil the shaped dough before baking... but it's the same recipe SF has provided.

    Just roll out a rope a couple feet long and thumb thick.

    Make a "U" with it, then bring the left top to 5 o'clock and the right top to 7 o'clock and let it sit for a few minutes.

    Transfer each pretzel to a pot of boiling water with a quarter cup of baking soda in the water, wait for it to float, and use a large slotted turner to carefully place it on a cookie sheet lined with parchment. (or grease a cookie sheet) 425f. for 13 minutes.

    4 cups of flour will make a dozen or so large soft pretzels about the size of your hand.
