    I've always been timid about pressure cookers.

      free-standing electric things that cost about $100.  My mother bought it on QVC for me as a birthday present one year.  Works just fine, and absolutely safe besides -- unlike the old-fashioned ones with the bouncing coin-like thingie on the top, you can hurl this one against the wall when fully pressurized, and the only thing you'll have to worry about is denting the wall.  A tad small at 6-quart capacity; if you cook for a week or for a large family, definitely get an 8-quart model.

          Every time you wash your pressure cooker, rub a little vegetable or olive oil (whatever's handiest) over the gasket.  This will keep it supple to avoid that "Why won't the lid seal?!?" frustration.
