Structuring everything so it works properly with CSS is a pain in the head at first, but once it's done it's sooooo much easier to change the look and feel of a site. Part of what I'm learning over at Team Treehouse is how to do responsive and adaptive designs that modify themselves based on whether you're viewing the site on a mobile device, desktop monitor, tablet or what have you. It's very nifty stuff, if somewhat exotic for a simple Perl hacker like me.

I like the site CSS Zen Garden as a demonstration of how you can change things around to present the same basic information in many different ways, just by loading a different CSS file.
