We were hosted to a micro restaurant supper in the Loch Lomond region (a few minutes' drive NW out of upper income Glasgow suburbs) featuring much local food including salmon, many salad ingredients and more, as far removed in terms of fat and poverty staples from haggis and fish/chips yet still local and really mostly traditional ingredients. Part of an organization or movement called A Taste of Scotland which is ongoing sez google.
