  •  What do you use for (8+ / 0-)

chive blossom vinegar? As in what type of vinegar? I make herbed oils w/olive oil but sometimes I live a simple veggie oil because it lets the herbs star. Do you use a white vinegar?

I'm lucky because mr uintas is a beer brewer and I have all the bottles I need and he can cap them.

Since I am originally from Pittsburgh, home to the HJ Heinz family. I cut off the tops of chive blossoms with maybe 1/2 inch of green stem and put them in wide mouth mason jars before filling with white vinegar.

Put the filled mason jars on a window sill in the sun for two to four weeks, then strain and discard the chive blossoms. Decant the finished vinegar into smaller clear glass containers for gifts and daily use. It works great!
