I love stuffed cabbage soup -
parboil cabbage long enough to soften the leaves.
In a large pot, place 4 potatoes cut into chunks, add salt and pepper, 1 onion diced.
Brown 1 lb ground beef. Drain, and mix 1 cup of cooked rice - (1 cup before cooking)
Roll a couple tablespoons of beef/rice mixture into a cabbage leaf and place in pot over potatoes, continue as mix lasts. Cut up some of the cabbage and add to the top of the rolls.
Cover with water, bring to a boil then cover and reduce to a simmer. Potatoes should be done in about an hour, add 2 cups of milk and 2 pats of butter, simmer 10 minutes more, then serve it up. Some of the cabbage rolls may break apart, but it's ok, it adds to the flavor. You can add some other seasonings, garlic and???
It's a simple soup, but tasty!
