  •  On vacation, so steak... and a cooking class (4+ / 0-)

I'm on vacation in San Miguel de Allende, Mexico, and this is Day of the Dead (Dia de Los Muertos) weekend, so lots of tourists here from other Mexican cities.

So I've been eating out most of the week.  Tonight, it was a wonderfully prepared medium rare flank steak at an Argentinian restaurant, with roasted baby spuds and a beautiful mixed green salad.  Dessert was a fantastic caramel flan.

I had the pleasure on Monday of taking a wonderful cooking class with San Miguel's fantastic pastry chef, Paco Cardenas, owner of El Petit Four.  The class wasn't a pastry class, though, but rather a great introduction to Mexican home cooking, with an hour and a half tour of the local mercado, meeting his favorite market vendors, and shopping for such things as prickly pear cactus leaves and fruit and cuitlacoche (corn fungus) before a van ride to his house.

The five class participants spent another four hours cooking with Paco in his wonderful patio kitchen, and then enjoyed the resulting comidas with some fine Mexican wines.   We made 3 salsas and some wonderful dishes, though his helpers ended up making the tortillas instead of us because we ran out of time having too much fun!

Salsa de Xoconostle (Prickly Pear Salsa)
    Salsa Ranchera en Molcajete
    Salsa Verde Con Aguacate
Flan de Queso al Cilantro (actually, a souffle)
Cuitlacoche (corn fungus) a la Cazuela
    Tinga Poblana
    Garbanzos del Mercado
Jitomates Rellonos con Ensalada De Nopalitos
    Rajas con Crema
Frijoles Negros de la Olla con Epazote
Postre de Chocolate Y Tequila (chocolate mousse with tequila)

Accompanied by fine Baja California Chardonnay & Merlot.

Great class, great food, great company, great instructor.  It wasn't cheap, but it was a vacation splurge that I will never forget.
