    It is Chinese rice porridge. My version:
    5 slices fresh ginger, chopped
    5 cloves garlic, chopped
    1 onion, chopped
    Saute in a little coconut oil or safflower oil (not olive) until softened.
    Add 6 skinless boneless chicken thighs, cut bitesize
    1 can coconut milk
    1 cup short grain white rice (sushi rice is best but you can use whatever you have)
    1 quart chicken broth, homemade or boxed low salt
    1/2 pound of mushrooms, sliced. I like shitake but any kind is fine.
    Salt and a little soy sauce

    Bring to a boil and turn down to simmer, stirring often to keep rice from sticking. After about 40 minutes the chicken and rice will be tender and the soup will be thick and delicious. Garnish with chopped scallion or cilantro, a drizzle of sesame oil, soy sauce, sriracha and know soup bliss!
