In a Different Voice by Carol Gilligan talks about women's development and psychology.

When God was a Woman by Merlin Stone and The Chalice and the Blade by Riane Eisler take on religion and women's history.

There's a ton of really good feminist theology out there - one of the best books I read when I was "starting out" was The Dance of the Dissident Daughter by Sue Kidd Monk (of The Language of Bees and The Mermaid Chair fame).  She actually started as a "religious writer!"

Sr. Joan Chittister has written some very powerful books about women - The Story of Ruth springs to mind, although there are many others.  Ping me if anyone would like additional recommendations.
