Recently I've gotten really into cooking various legumes. I'm not a vegetarian, partly because my family would rebel. And although I think it's kind of a shame to eat animals, well, animals eat animals, so I'm not completely morally opposed.
However, if you want to save the planet, legumes take much less energy to create vegetables than meat.
So here's a recipe from last night's dinner that was a million times yummier than I anticipated:
Ingredients
Butternut squash
Onion
Two cans black beans
Olive oil
Spices: cumin, coriander, ginger
Maple syrup
(1) Cut up the butternut squash and saute in the olive oil.
(2) Chop onion and add that to the butternut squash and saute that too.
(3) Add two cans of black beans, and about a can of water so it can simmer for a while without burning your pan.
(4) Lower heat and add spices: pinches of cumin, coriander and ginger
(5) Add about a tablespoon of maple syrup
Cook and stir occasionally until the water has boiled off and it's thicker.
Easy, yummy. Even vegan...
