It's Saturday morning and time for breakfast!
1 1/4 c. whole wheat flour
1 Tbsp. baking powder
2 Tbsp. brown sugar
1/4 tsp. salt
2 eggs, separated
1 1/4 c. milk
vegetable cooking spray
Combine flour, baking powder, brown sugar and salt in medium bowl. Combine egg yolks and milk, add to dry ingredients stirring until mixture is smooth.
Beat egg whites at room temperature until stiff peaks form and gently fold into batter.
Coat waffle iron with vegetable spray. Allow to preheat. Pour batter onto hot waffle iron.
Bake until done (steam stops).
Yield 16 (4-inch) waffles.
