I haven't posted any recipes in a while. I've been kind of busy moving my mother out of her home and into mine and then the holidays and well ....But I was reminded of this recipe by commenter Lonely Texan in an diary by l3m0n about living on $5/day food stamps. He remembers making a pasta dish with eggs. So without further ado here's a fast easy recipe for Spaghetti Carbonara.
Carbonara means coal miner. I don't know why this spaghetti dish is in coalminer's style but at any rate it's 1 lb. spaghetti, 1 lb. bacon diced, 4 eggs beaten, 1/4 C parmesan or romano cheese grated.
Boil pasta according to package directions. Saute diced bacon til cooked but not crisp. Beat eggs in a bowl big enough for a pound of pasta and add cheese and mix. You can add black pepper if you like.
The tricky part is timing. Try to have the bacon done by the time the spaghetti is done. Drain spaghetti quickly and pour over eggs and cheese. Quickly add very hot bacon and toss. The heat from the bacon and pasta will cook the eggs and this dish should be creamy.
It should feed 4-6 people. Enjoy. This is one of my favorites and it's comfort food. It will stick to your ribs for a long while.
