This is a low-fat, low cholesterol, recipe.
1 cup low-fat cottage cheese
1 T. lemon juice
8 oz. thin spaghetti
1 T. oil
1/4 cup scallions, chopped
1/2 cup onions, chopped
1 clove garlic
Freshly ground black pepper
2 cups mushrooms, sliced
1 cup green pepper, sliced
1 1/2 cups carrots, sliced
1 (10-oz.) pkg. broccoli, steamed
Mix cottage cheese and lemon juice. Set aside. Prepare spaghetti according to directions.
Meanwhile, heat oil in skillet and saute scallions, onions, garlic and black pepper for 1 minute. Add mushrooms and stir for 1 minute. Add green pepper, carrots and broccoli, and stir for another 3-4 minutes. Set aside.
Toss hot spaghetti with cottage cheese mixture and top with sauteed vegetables.
Makes about 4 servings.
