These are pretty tasty!

Ingredients:
1 med. white onion
1 med. red tomato
1/2 C. canned jalapeno peppers
1/2 lb. Colby cheese
1 lb. lean ground beef
1 1/2 tsp. chili powder
1/2 tsp. ground black pepper
1 tsp. garlic salt
1/4 tsp. cayenne pepper
1/2 tsp. dried oregano
8 flour tortillas
2 C. vegetable oil
Directions:
Peel onion and cut into 1/4-inch pieces. Remove the stem
from tomato and cut into 1/4-inch pieces.
Chop jalapeno peppers into 1/4-inch pieces.
Grate cheese.
In a medium frying pan, fry ground beef and onions on medium heat until meat is browned and onions are translucent.
Drain off grease.
Add tomatoes, jalapenos, chili powder, black pepper, garlic salt, chili powder, cayenne pepper, and oregano.
Simmer for 10 minutes.
Put 2-3 tablespoons of mixture in the middle of each tortilla, and add 1 tablespoon
of cheese on top.
Fold tortillas and secure with toothpicks.
Heat vegetable oil to medium-high in a large skillet. Add 2 or 3 tortillas at a time. Fry
quickly until golden brown on each side.
