GUS: I have returned...sorta (with Open Thread)

And so I missed my regular slot last week because I was at my Mom's without internet.
I was congested and having enough trouble breathing, that I was out of work for the whole of last week. Turns out, that while June 6th will be my 6-month anniversary of not smoking, my lungs have not cleared up a whole lot and the congestion is enough that my doctor wants me to see a Pulmonologist.
He did warn me not to go back to smoking (something I must admit I had considered but rejected) just because I don't feel so great. He said to stick it out and just use my inhaler and see what the new doctor says.
And so while I have my home cleaned and wait to see the doctor, I have a new recipe for you - Salmon baked in foil.
Ingredients
4 salmon fillets (5 oz. each)
2 teaspoons olive oil plus 2 tablespoons
Salt and freshly ground black pepper
3 tomatoes, chopped
2 chopped shallots
1/2 bunch fresh asparagus (approximately 12-14 spears) cut in half
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 pound angel hair pasta
Directions
Preheat oven to 400 degrees.
Sprinkle salmon with salt and pepper and drizzle with the 2 teaspoons of olive oil. Set aside.
In a medium bowl, combine the tomatos, shallots, asparagus, lemon juice, salt, pepper, and the 2 tablespoons of oil. Stir til well mixed.
Take one salmon fillet and place, oiled side down, on a sheet of foil. Spoon the tomato-shallot-asparagus mixture over the top of the salmon (about 3-4 tablespoons) Fold the foil over the salmon and veggie mixture, covering completely, and seal the ends by twisting them. Place the sealed foil packet on a heavy baking sheet. Repeat with the remaining fish and veggie mixture creating 4 individual packages placed on the baking sheet. Bake until the salmon is just cooked through, about 25 minutes.
While the salmon is baking, cook the angel hair pasta per package directions. Drain when finished and divide among 4 shallow bowls or large plates.
When the salmon is done, open the foil packages and place the salmon and the vegetables on top of the pasta and serve.
