Hey, pasta! I've been informed by someone who would know that this isn't actually Fettucini Alfredo. It's a recipe from the first dot-com bubble, way back in the late 90s, when IGN had a billion subsidiary websites, including the now-defunct "IGN for Men". The site had a letters column and a guy wrote in with this recipe, which I have cooked about a zillion times since then.
This recipe has stayed with me, handwritten on a notepad, for over a decade. So I present to you what might be the only surviving copy of Fettucini Al-Rando:
Ingredients:
- 8oz fettucini
- 6-8 strips bacon
- 1/2 cup grated parmesan (2 oz - trust me on this one, you want it by weight)
- 2 tbs melted butter or margarine
- 3 scallions or green onions
Prep:
Chop onions, grate cheese, cut bacon into 1/2 inch pieces. Fry bacon, cook pasta, and drain.
Combine all ingredients except the butter; pour the butter overtop and stir thoroughly
Here's my mise en place as I neurotically organize everything in advance. I note that I have knolled all the ingredients, the geek that I am.
So, what's for dinner?
