Good morning GUSdearies! I have my music diary in the queue because I'm looping back into the wicked part of this damned cold. I think my buddy's hacking recycled the germs. Rats! I was so looking forward to a vigorous back and forth, especially with that Miss Portiasmartypants. I'd prefer to be on my game.
Hoping those of you who are still iced in without power are able to stay warm, safe and fed. Hoping citizenx didn't walk for coffee and find none. The storm is on its way here later today.

Navy Bean Soup
Ingredients:
1 pound dried navy beans
2 quarts boiling water
2 large ham hocks or a meaty ham bone (or omit if you want vegetarian)
1/4 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped carrot
1/4 cup unsalted butter
1/4 cup olive oil
1 large can crushed tomatoes
1 tsp. thyme
chopped ham or ham from the meaty bone
salt and pepper to taste (I add a little seasoned salt along with regular)
Preparation:
Wash the navy beans and pick over for small stones and malformed beans. Pour the beans into a large pot and add boiling water to cover by a couple of inches. Simmer for 45 minutes.
In another large pot, heat oil and butter and then add onion, celery and carrot and sautee until veggies are transluscent.
Add beans to the veggies. Add 4 cups of water or vegetable juice and tomatoes and thyme, ham, salt and pepper. Bring to a boil then lower to a simmer and cook for at least 2 hours or until beans are soft.
Remove bones and remove any meat from bones. If you want a creamier soup, puree half of the soup and then add back into pot of soup and reheat.
In a pot, simmer the ham bone or ham hocks with the beans (and their soaking water) until the beans are tender, about 1 1/2 hours. Remove bones and chop ham. Add chopped onions and celery. Add enough water to make about 1 gallon. Add the ham meat back to the pot. Taste the broth and add salt and pepper, as needed. Cook about 30 minutes to 1 hour longer.
Makes about 10 to 12 servings.
