I hope you don't mind a food diary; I've spent much of the past two days in the special section of hell known as "Company Switched Insurance Providers" and the only other diary topic in my head was a rant. Not even a good Huntery rant, just a venting of the "I'm really frustrated and can't understand why anyone would choose this over single-payer" kind. While I absolutely will vent in the comments if we wanna go there, I assume (hopefully correctly) everyone is more interested in food. Back when I was in graduate school, a lab-mate and his partner invited Mr. Brillig and I over for dinner. They made us, and I quote, "Thai Lady Curry". It was a wonderful spicy Masaman curry and of course we asked for the recipe, hoping to find out where the Thai Lady came into the equation! They shared the secret:
"So go to the Asian grocery and look for the cans with the Thai lady picture on them. Don't get the other ones, get the one with the lady on it. Then add a can of coconut milk, and..."
To this day, we still call anything made with Thai curry paste "Thai lady curry" whether it be green, yellow, red or Masaman. And yes, we always, always look for the Thai lady on the label:
Thai Lady Curry Paste
What we actually made out of said curry paste and devoured for dinner:
Ingredients:
1 can Thai Lady Masaman Curry Paste
1 can light coconut milk (we used Trader Joes brand, full-fat works fine too)
2 cups yellow onion, chopped into bite-sized pieces (you want them to stay intact)
4 yukon gold potatoes, bite-sized chunks
4 carrots, sliced thick on the bias (chopped bite-sized works too!)
1.5 lbs boneless skinless chicken (tofu works too!)
1.5 cups unsalted chicken stock (used instead of ANOTHER can of coconut milk)
Peanuts for garnish
Preparation:
Heat the coconut milk and curry paste in a large pot big enough to hold the quantity of meat and veggies you'll be using. When the curry paste has dissolved into the liquid, add your veggies and chicken plus enough of the chicken broth (or more coconut milk) so that there's enough liquid to cook the veggies in.
Bring to a boil then simmer until everything is cooked through, 20-30 minutes. Serve over rice and garnish with chopped peanuts if desired.

Thai Lady Masaman Curry over brown rice... nomnomnom!
This quantity, we decided, served 6 based on the amount of meat we used. As you can see, it's versatile and you can play with the quantities of everything to make it uniquely your own. I prefer it with pineapple chunks stirred in at the end, but K2 hates pineapple so we left it out. I am trying to cut down on carbs, so for leftovers I ate it over steamed cauliflower and it was wonderful.
I ran the ingredients through the recipe nutrition calculator at myfitnesspal, and came up with the following per-serving information (does not include the optional peanuts or the cup of brown rice I ate with it):
350 Calories, 25g Carbs, 10g Fat, 27g Protein, 4g Fiber, 8g Sugar
Add rice and 1 oz peanuts and you have a big bowl of yumminess for just over 700 calories. I call that a win on a day when I'm splurging on dinner!
