Can you cook well or do you depend on others
or perhaps not care about food presentation?
As many of you know, I'm a foodie. I love food and have learned how to produce dishes that taste good to me. One labor intensive recipe I've developed is Salmon Cakes. It's subjective. My recipe is what * I * want in the dish. YMMV. Here are step-by-step photos of my process with a hat tip to Chrislove for his many diaries depicting delicious dish completion.
I prepare Cedar-planked Salmon at least once a week. Sometimes I prepare extra so I can make Salmon Cakes. I prefer the freshest food possible but you could certainly use canned salmon in this dish.
From that Cedar-planked Salmon I place in a mixing bowl and flake with a fork:
Carefully chop a tiny dice of equal parts of organic yellow onion, yellow bell pepper and red bell pepper. For the two pieces of salmon you see above I used one half of each vegetable and then sauteed in olive oil with Tibetan Sea Salt and freshly ground black pepper. Let the vege mix soften and gloss on low heat while you perform the next steps.
Into the flaked salmon add dried organic dill weed. I'd say a generous 2-3 tablespoons. Distribute evenly:
I'm all about using fewer dishes since I'm the dishwasher also. So you can see my plan is to add two scrambled eggs that will bind the cakes together when the egg cooks. I scooched the salmon mixture over to make a well for the eggs. I was able to scramble the eggs in that well:

Next, we need to add absorbable carbs to be the tender texture component to the eggs that hold the cakes together. Without the absorbable carbs you would have an omelette-like texture. Not that there's anything wrong with that but this dish is known for being tender. The absorbable carbs provide that element. I use panko bread crumbs. Here I've floated them on top of my scrambled egg mixture, about 1/3 of a cup. I mix the panko into the eggs and let sit for a couple of minutes. I want the panko to be soaked with egg. Then they can be mixed with the flaked salmon.
After the onion/pepper mixture becomes glossy and soft remove it from the heat and let it cool a bit. You need to add it to the egg mixture and if it's too hot it will cook the egg before we want the egg to be cooked. So after it's cooled slightly, add and incorporate it to the flaked-dilled-egged-panko'd salmon.
Pre-heat your oven to 400 degrees.
You need to work fast now or the carb components get too soggy and gelatinous.
Next, I divided the mixed bowl of ingredients into fourths with a line of demarcation using my wide spatula piercing the mass into four visual segments. I missed this photograph. This is a step to make the cakes equal sizes. So visualize the ingredients in a bowl marked with a cross. You'll scoop up each one of those quadrants to make individual cakes. Next, I made a very thin layer of panko bread crumbs on a plate, this to be one side of the coating on the outside of my cakes. My plate was too small and so I only show three cakes being processed here.
Place an oven-proof pan on the stove at high-medium temperature. We're gonna start cooking our cakes on top of the stove and finish in the oven. Add a just a bit of olive oil to your pan and let it heat up. Just a bit to coat the pan, we're not deep frying.
Back to the salmon mixture. Sprinkle a slight amount of panko on top of the equally divided amounts of salmon mixture.
Now pat the panko around each mound and begin to hand form each cake. Once formed and coated with panko I use a spatula to transfer the cake to the frying pan. The cakes are extremely delicate and destructible at this stage. Use extra care in handling and shipping them to the frying pan. They crumble easily and will not hold together until the egg binding mixture cooks.
Carefully attend and turn when nicely browned on one side. Place in the oven to finish cooking the inside. It only takes a few minutes. Be vigilant.
I like to serve my cakes over a dark green salad with (not pictured) a homemade Thousand Island Sauce (mayo, chili sauce and sweet pickle relish) and lemon wedges.

Four Kossack regional groups descend on the California State Capitol
to demand that Governor Jerry Brown ban
the oil and gas production process known as fracking

Representing Northern California, the SFKossacks, Central Valley Kossacks, Paradise & Chico Kossacks and the Silicon Valley Kossacks gathered on the mall of our state capitol in Sacramento on Saturday, March 15th to protest fracking. Governor Brown has the ability to ban the environmentally destructive, water-intensive oil extraction practice known as hydraulic fracturing in California. The state is in a severe drought and the last place our water should go is into fracking. It is estimated the protesters numbered around 4000. We endured the hot sun which sent the temperatures into the 80s as we gathered midday to make a lot of noise and get the attention of the Governor.
