Ah, spring. The heavy soups and stews of winter are behind us, and we look forward to the early fresh foods and salads of the season.

How was that for putting on my metaphorical apron and imitating a cover story worthy of Better Homes and Gardens? However cliche it is, I am sick of winter leftovers (I really must throw out that remnant of lentil soup) and have begun to revisit some of my regular online cooking light sites. Two favorites, Skinnytaste and emily bites include Weight Watcher points conversions and lightened versions of comfort foods, which you don't have to be on a diet or counting points to enjoy. Aaagh, I'm feeling ridiculously like Betty Crocker again.

White Vegetable Lasagne Cupcakes from emily bites
Lately I've been into making cupcakes. Not the cake and frosting kind, the mini-meal kind: Lasagne cupcakes, enchilada cupcakes, taco cupcakes, even Caesar salad Parmesan cupcakes. Are you happy now, Julia Child?

While these take a bit of assembling, it's still far less work than assembling a pan of lasagne or enchiladas. They make nice single-meal sizes that can be frozen or taken to parties as appetizers. Basically you spray a muffin tin (or mini-muffin tin for appetizer-sized cups), line each cup with a won ton wrapper, add your first layer of ingredients, add another won ton wrapper, then add another layer of ingredients and bake. Caesar Salad Parmesan Cupcakes from emily bites
The baked cups turn out crispy and light and one or two 'cupcakes' are pretty filling. I mean, this is rich food; it helps me to dole it out.

The white vegetable lasagna cupcake is only 131 calories and 4 WW pts each, while the red lasagna cupcake with low-fat ground beef (I use turkey Italian sausage) is 165 calories and also 4 WW points. Both are crispy light, delicious, and handy to have around.

Another seasonal craving I've been having is for spinach and mushrooms, which on weekends I turn into either a scramble or a fritatta. Spring is a good time for dark green vegetables that benefit the liver, which brings me to another favorite seasonal food:


Artichokes-Stuffed-with-Citrus-and-Shrimp
Shrimp stuffed artichokes

For this recipe I cook and cool the artichokes, scoop out the fuzzy choke and spritz the heart with lemon juice, then stuff with cooked shrimp in a mix of light mayo, fat free Greek yogurt, lemon juice, dill and shallots.

With all of the above I love a salad made of spring greens with a dressing of a bit of avocado oil and lemon juice, garnished with cherry tomatoes, avocado, crumbled bleu cheese and a topping of chopped walnuts. Bring on the noms.

Seattle Kossacks Commiserate

Baja Arizona Kossacks Meet-Up Liveblog

The Baja Kossacks just had their 4th Annual Picnic at the home of Mr. and Mrs. sneakers563. The group is shepherded by Azazello, an official member of DKos since 2009. From his diary and about his state:

More and better Democrats is always a popular subject for debate here in Baja AZ, especially in an election year. Against the charge that Arizona is an incurably red state I often point out that 5 of our 9 US Reps are Democrats. This is true but it doesn't tell the whole story. While we in Tucson are justifiably proud of Raúl Grijalva (Wikipedia HERE) whose first elected office was board member for Tucson Unified School District #1, most of Tucson and all of Cochise County are now represented by Ron Barber (Wikipedia HERE) who is a very Blue Dog indeed. For an example of this Blue Doggedness see this article at Alternet ☛ 5 Million Dirty Reasons for Record Deportations.

He's on top of it and thanks to him for gathering Kossacks together to become stronger.

Four Kossack regional groups descend on the California State Capitol
to demand that Governor Jerry Brown ban
the oil and gas production process known as fracking

Representing Northern California, the SFKossacks, Central Valley Kossacks, Paradise & Chico Kossacks and the Silicon Valley Kossacks gathered on the mall of our state capitol in Sacramento on Saturday, March 15th to protest fracking. Governor Brown has the ability to ban the environmentally destructive, water-intensive oil extraction practice known as hydraulic fracturing in California. The state is in a severe drought and the last place our water should go is into fracking. It is estimated the protesters numbered around 4000. We endured the hot sun which sent the temperatures into the 80s as we gathered midday to make a lot of noise and get the attention of the Governor.

A group of ranchers, farmers and tribal communities from along the Keystone XL tar sands pipeline route, called the Cowboy Indian Alliance, will set up camp near the White House to tell President Obama to reject the pipeline.

Daily Kos Detroit VA Hospital Service Project

Sara R delivers 65 quilts, hand knit scarves and hats, books, 65 teddy bears, hand made greeting cards, and phone cards from the DK Quilt Guild, WAYWO, the Readers & Book Lovers, IGTNT and individual Kossacks to the nursing home at the Detroit VA Hospital. This is a wonderful project that many people can be involved with even if they don't attend the convention. If you care about veterans in a nursing home this is your project. Please volunteer to help.

Plenary Session Tables during the rest of the Convention
