Throwing a party for a big sports event calls for food that you can make ahead of time and let folks help themselves, doesn't it? I mean, who wants to spend all their time in the kitchen missing the game and the company of friends! So, for me, chili is a perfect winter-time party food. The longer it sits on stove simmering the better it gets right?
So, I decided I wanted to make chili for our shindig. Since Mark made up his mind that he wanted to make his sliders for the party I decided to look for a different spin on the traditional beef chili. Follow me below the orange cheese curl to see what I am going to be making in my big red Dutch oven!
After perusing a number of various chili recipes across the interwebs I decided on a chicken recipe that uses ground chicken instead of the usual shredded. The recipe was one of many featured in a recent post over at Serious Eats, 15 Hearty Chili Recipes for Superbowl.
I know I can really play with the flavors in this too and it will be great. Oh, and the recipe serves 4 so I'm doubling it.
30-Minute Easy Chipotle Chicken Chili
Ingredients
3 tablespoons olive oil
2 medium onions, diced (about 1 3/4 cups)
Kosher salt
2 jalapenos (or green chilies), finely chopped
3 medium cloves garlic, minced (about 1 tablespoon)
2 teaspoons ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1 pound ground chicken
2 chipotle chilies in adobo sauce, finely chopped
3 (15-ounce) cans white beans (such as great northern or cannellini), drained and rinsed
3 cups homemade or store-bought low sodium chicken broth
1 1/2 cups frozen corn, thawed
1/2 cup fresh cilantro leaves, chopped
2 avocados, sliced for garnish
Tortilla chips to serve on the side
Limes to serve on the side
Procedures
1 In large saucepan or dutch oven, heat oil over medium heat until shimmering. Add onion and 1 teaspoon salt. Cook, stirring, until softened and beginning to turn golden, 6 to 8 minutes. Add jalapeños, garlic, cumin, oregano, and cayenne. Cook until fragrant, about 1 minute.
2 Add chicken and cook until just cooked through, about 4 minutes. Add chipotle chilies, beans, and broth and bring to simmer. Simmer for about 10 to 15 minutes to let flavors meld.
3 Add corn to just heat through. Season to taste. Stir in cilantro and serve with avocado, chips, and lime.
There will also be other snacks to keep us all happy throughout the game:
Jalapeno Popper Pigs in a Blanket
Bacon Cheddar Potato Skin Poppers w/Ranch Sauce
Dill Pickle Dip
And the traditional French Onion Dip made with sour cream and a package of soup mix.
So, what is your favorite chili recipe? I know I've seen some good ones here over the years, share them in the comments!
As for what's for dinner here at Chez Ninkasi tonight we're having my magical re-working of leftover turkey loaf, broccoli, and mashed potatoes. I turned them into a kind of cottage pie! Yummmmm!
