Troll Diary: Shameless Saturday Whoring for Kos Recipes
Sat May 28, 2005 at 10:37:00 AM PDT
Since there don't seem to be any troll diaries around right now to swap recipes, I decided to create one myself. Let your revulsion of the following passage translate into some recipes:
Hillary Clinton is a manhater who seduced and then killed Vince Foster she says she wants to be President but she needs to get her ass back in the kitchen Barbara Boxer too she's uppity if she did maybe Bill wouldn't have cheated on her but he would have anyway because liberals are scum traitors who want to hand our country to the French and the Canadians speaking of Canadians they are traitors too don't forget the British who sent that Gallagher to infiltrate our Senate he's lying he knows he took millions of dollars from Saddam and stayed overnight at his palace he is part of the Muslim conspiracy to destroy Christianity wait a minute he's part of the zionist conspiracy don't you dare call me antisemitic everyone knows the jews oh I mean the liberals control everything.
I'll start it off:
Thai Green Curry Paste
2 tablespoons coriander seeds
1 tablespoon cumin seeds
1 tablespoon whole black peppercorns
8 fresh Thai green chiles
2 shallots, coarsely chopped
4 garlic cloves, smashed
Small handful of fresh cilantro sprigs
2-inch piece galangal, peeled and coarsely chopped
2 lemon grass stalks, white part only, coarsely chopped
2 kaffir lime leaves, torn
2 teaspoons dried shrimp paste
1/2 cup water
Heat the coriander, cumin seeds, and peppercorns in a small dry skillet for 2 minutes until fragrant. Put the seeds in a clean coffee grinder or spice mill and buzz the spices to a powder.
Put the spice blend and remaining ingredients in a food processor, and pulse to combine. Pour in the water to help grind everything down into a paste.
Store in airtight container in refrigerator between uses.

- Here's a decent online source for ordering Thai ingredients: grocerythai.com
- Galangal is a ginger-type root. It is milder than ginger, but if you can't find it, you can substitute ginger for galangal in the recipe.
- You can substitute jalapeno chiles or Serrano chiles for the Thai green chiles. But note that these peppers are less spicy than the Thai green chiles. You can also get away with substituting basil (preferably Thai basil, but if you don't have it, any type of fresh basil leaves) for the Kaffir lime leaves. Here's a great website for figuring out ingredient substitutions: foodsubs.com.
