Hi everyone, welcome once again to Soupin It Up w/Sped where we talk anything soup related. Today's theme is Broccoli- don't forget to vote in this week's poll to determine what next week's theme will be.
Sped's Creamy Broccoli Soup
Ingredients:
2 heads of broccoli, chopped
2 medium leeks, sliced
2 tsp. olive oil
4 cups vegetable stock
2 cups 1/2 and 1/2
sea salt, minced garlic, black pepper to taste
Directions:
- Steam broccoli and set aside half.
- In stock pot, heat oil and lightly sautee leeks.
- Add vegetable stock and 1/2 of the broccoli.
- Simmer 20 minutes.
- In small batches, transfer to a blender and puree until smooth.
- Return to stock pot and add 1/2 & 1/2. Stir and simmer 5 minutes.
- Add the rest of the broccoli and spices to taste.
- Serve garnished with a little cheese or break up a bunch of crackers like i do.
Cheesy Crab & Broccoli Bisque
Ingredients:
1 lb. crab, cooked
2 heads broocoli crowns, chopped
1 clove garlic, minced
2 medium leeks, sliced
2 tbs. olive oil
1 1/2 cups of 1/2 & 1/2
4 cups vegetable stock
1 lb shredded cheese (your pick but I use asiago)
Directions:
- Steam broccoli and set aside 1/4 of it.
- In stock pot heat oil, lightly sautee garlic and leeks.
- Add crab and vegetable stock. Simmer 15 minutes.
- In small batches, transfer to blender and puree til smooth. Return to stock pot.
- Add 1/2 and 1/2 and the rest of the broccoli. Simmer 15 minutes.
- Add cheese a little at a time, stir until melted in.
- Serve garnished with a little cheese or croutons.
Asian Style Chicken Broccoli Soup
Ingrdients:
1 lb. boneless chicken breast, diced and cooked
1 head broccoli, chopped
1 bunch bamboo shoots, chopped
1 can water chestnuts, sliced
5 cups chicken stock
soy sauce (optional)
black pepper and ground ginger
Directions:
- Steam Broccoli and Bamboo Shoots
- In large stock pot, combine all ingredients and simmer 30 minutes.
- Serve garnished with friend wonton noodles.
