A couple of hours ago, I made a very decadent brunch, with two fried eggs, potato hash browns, bacon, and two slices of toast with butter and jam. On the weekends, I like to relax and spend time in preparing a good breakfast because I don't have the time to do it during the week when I'm usually in a mad rush out the door.
This method of preparation for the potato hash was interesting, but it turned out well. I had one baking potato, which I peeled, cut into one inch slices, and then diced the potato rounds evenly. I added about a cup of diced potato to a pot of boiling water with a skimmer for the potatoes to be blanched for about five to seven minutes. I kept the rest of diced potatoes in a water-filled container in the fridge since I was only cooking for myself.
I turned the other pan on, letting it warm up to the desired temperature at medium-high before I added in two tablespoons of unsalted butter, a tablespoon of olive oil. It sizzled quite nicely when I drained the potatoes with the skimmer I had on hand, and added them to the pan. I added some kosher salt and coarsely ground black pepper to the diced potatoes, letting them brown on one side before flipping them over. Once they were flipped over, I covered the pan with a lid for them to steam through a bit for two minutes. I took the lid back off, and flipped the potatoes over again.
I turned my special nonstick pan on for the fried eggs to medium-high. I added in a tablespoon of butter and a dash of olive oil. I cracked two eggs into a small bowl, which I tipped slowly into the nonstick pan. The eggs slid in, and the opaque whites started turning white.
The bacon was finally ready, and I took them out of the microwave, adding a small drizzle of maple syrup to sweeten them.
I took a look at the potato hash browns, and they were nicely browned on all sides, and crisp. I took the pan off the stove, and added the potatoes to my plate with chopped parsley. Then I slid the two fried eggs on top of the potato hash browns, and added the bacon on the side.
I dug in, and it was delicious, well worth the half hour of prep I'd spent on the potatoes.
This breakfast was one of my favorites, and it felt so decadent eating it on the couch to an episode of HGTV with hot coffee on hand.
