This is a continuing series of recipes, mostly from my grandmother that are pretty cheap to make. This one is just a cheap simple dessert recipe that she picked up from a friend of hers. It's quick and easy. It's a good dessert to bring to a pot luck especially in summer. I buy canned pie filling and butter on sale.
Cherry Crunch Cake
4 Cups flour
2 ½ Sticks margarine or butter softened
1 ¼ Cups sugar
1 Teaspoon salt
2 Teaspoons baking powder
3 Eggs
1 Can fruit pie filling (cherry, blueberry, pineapple, apple etc.)
2 Tablespoons flour (separate)
Add flour, margarine, sugar, salt, baking powder, and eggs together and mix (should look like chicken feed or crumbs)
Put 2/3 of crumb mixture into a greased baking pan 9x13
Pat it down to form a crust
Add the fruit pie filling over the patted down crumbs
Add 2 tablespoons of flour to the remaining 1/3 crumbs and spread over the pie filling
Bake for 1 hour at 350 degrees
NOTE
If you double the recipe you can use a jelly roll pan 10x15 and make ½ with one kind of fruit filling and the other ½ with another flavor
