Hola, Gussitas and Gussitos!!!   I'm really being lazy by offering a quesadilla recipe -- but who the hank doesn't love Mexican food and those recipes that don't require extreme genetic codes which allow one to cook the perfect authentic Mexican meal?  I have a cookbook in my Amazon shopping cart which I hope will teach me some great techniques of authentic Mexican cooking.  

Without the book, however, I have to rely on my intuition of what seems to work together.  So, after I tell you about how great we are, I'll get into the recipe.  Also, too, this is yet another pre-written diary for Sunday since I'm being abducted to the lake in the midst of a torrential rain storm later this afternoon.

                            A message to ALL quitters. You don't have to avoid GUS if you have a failed quit.  We won't give you a bad time and we consider the failed quits as "practice" for the real quit.

                            Quit Keeper widget which is an outstanding aid for those beginning the difficult path to quitting.  It lets you know how long you haven't smoked, how many cigs you haven't smoked, how much money you've saved.

                        Quit Smoking Counterh/tGDbot.  For those of you who have had a problem with Quit Keeper or want a different counter!

The beauty of quesadillas is that you can add anything you want -- other than wild boar which hasn't been cooked yet.  I often use leftovers and always have refried beans available -- homemade or canned.  I'm never without cheese, but quesadillas need a good melty cheese which I think is Colby or Monteray Jack or a blend.  Last night I blended Colby with a pepper jack (Monteray).

Tortillas (I buy them -- Mission are perfect -- if you can make your own, I'll adopt you)  I get the large tortillas which fit perfectly in my 12 inch cast iron pan.

Refried beans

Cheese -- preferably Colby or Monteray Jack -- shredded

Cooked chicken or pork or beef cut in small pieces (or shredded) or no meat at all

Sour Cream

Salsa (homemade or store bought)

Guacamole (homemade or store bought)

Vegetable oil

12 inch cast iron pan or something heavy duty

Preheat oven to about 275 degrees if you are making multiple quesadillas

Heat refried beans and add shredded cheeses until creamy and well blended.

Coat your pan with oil and heat to medium or medium high depending on your stove.  You don't want to burn the tortilla.  I use medium because my stove sucks.

Smear a thin layer of the refried beans on one tortilla -- stay about 1/2 inch from the edge -- as with all ingredients.

Place in pan and quickly sprinkle cheese, then meat (or no meat -- then add more cheese)  Top with more cheese and place a second tortilla on top.  Use your spatula or offset spatula to check the bottom to see if the tortilla is browning.  When crispy brown, flip and repeat with checking.

Remove quesadilla and place in oven if you are doing more than one.

When ready to serve, use a pizza cutter or bread knife to cut in four wedges.

Serve with sour cream, salsa and guacamole.  Guacamole recipe to follow.

The following guacamole is the best I've ever tasted.  Adjust for amount of avocados you will be using.  I use one and just cut back on other ingredients.
Guacamole a la Alton Brown

Ingredients

    3 Haas avocados, halved, seeded and peeled
    1 lime, juiced
    1/2 teaspoon kosher salt
    1/2 teaspoon ground cumin
    1/2 teaspoon cayenne
    1/2 medium onion, diced
    1/2 jalapeno pepper, seeded and minced
    2 Roma tomatoes, seeded and diced
    1 tablespoon chopped cilantro
    1 clove garlic, minced

Directions

In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, jalapeno, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.

A tag is a way to search for this diary. If someone is searching for "Barack Obama," is this a diary they'd be trying to find?
