As you can see by Itzl's concerned look, this group is for us to check in at to let people know we are alive, doing OK, and not affected by such things as heat, blizzards, floods, wild fires, hurricanes, tornadoes, power outages, or other such things that could keep us off DKos. It's also so we can find other Kossacks nearby for in-person checks when other methods of communication fail - a buddy system. Members come here to check in. If you're not here, or anywhere else on DKos, and there are adverse conditions in your area (floods, heatwaves, hurricanes, etc.), we and your buddy are going to check up on you. If you are going to be away from your computer for a day or a week, let us know here. We care!

Good morning everyone!
Since it's the weekend and many of you are off of work, I thought you might like to bake some really great mini cupcakes. I've been making these for 30 years, and everyone loves them.
Chocolate Cupcake Surprise
1 1/2 cups flour 1 cup water
1 cup sugar 1/3 cup oil
1/4 cup cocoa 1 T. vinegar
1 t. baking soda 1 t. vanilla
1/2 t. salt
Filling:
1 8 oz. package cream cheese
1/2 cup sugar
1/8 t. salt
1 6 oz. package semi-sweet chocolate chips
Sift together flour, sugar, cocoa, soda and salt. Add water, oil, vinegar and vanilla. Beat well. In a separate bowl, beat cream cheese, sugar and salt. Fold in chocolate chips. Fill mini cupcake pans 3/4 full, then drop one teaspoon cheese mixture on top. Bake at 350 for 25 minutes. (May also be baked in a greased 9 inch square pan for 50 to 60 minutes.) Makes 3 dozen mini cupcakes. I use mini cupcake papers.
