Garlic/Poetry
Garlic isn't just garlic, there are many different kinds of garlic and they're almost all different in size, color, shape, taste, number of cloves per bulb, pungency and storability. There are ten distinct types and there are said to be over 600 cultivated sub-varieties of garlic in the world. When I went to the Heirloom Festival in Santa Rosa two years ago I saw farmers presenting at least 100 varieties. I was searching for German Porcelain but no one had them.
Having decided to grow only German Porcelain garlic because of its characteristic of only four to five delicious cloves I saved some of my seed stock but purchased more from a garlic grower in New York state. The heads looked the same as I separated them into cloves for planting. I planted them at the same time, in four blocks. Now that they have grown through the winter I see a marked difference between the two.
It might not be easy to see but from the left you see short/tall/short/tall which translates to mine/other guy's/mine/other guy's. So are they actually the same type? Have my saved seed stock cloves lost potency or genetic diversity? I will know more when I harvest them and compare the actual cloves. In any case i will have 200 garlics and that's a good thing. With that quantity one can splurge and roast them in the oven with brie cheez on the top. Absolute heaven. Or one can make an easy aïoli.
Quick Aïoli
1 large egg
2 to 3 cloves garlic, minced
1 teaspoon Dijon mustard
1 cup extra virgin olive oil
2 to 3 teaspoons freshly squeezed lemon juice
Kosher salt
Freshly ground black pepper
Combine the egg, garlic, and mustard in a food processor and pulse a few times to combine. With the motor running, add the oil in a thin stream. Add the lemon juice and pulse again. Season to taste with salt and pepper.
Makes about 1 ¼ cups.
