I cook dinner every other Friday night for a group of friends. We call it The Friday Night Dinner Club. Because I am retired and home, i often cook meals that I can make during the day and then heat and serve right on time. This menu is one of my faves.

Stinky Bread
All of this can be done ahead of time. The ribs will be completely cooked, falling off the bone, so all you have to do is put them on the grill for 15 minutes to crisp and glaze them. Yummy! The cole slaw wants to sit in the fridge for at least a couple of hours and the bread can be prepared and then broiler baked while the ribs are on the grill.

Ribs baked in foil
1/2 cup brown sugar
1/4 cup paprika
1 tbsp black pepper
1 tbsp salt
1 tbsp chili powder
1 tbsp garlic powder
1 tbsp onion powder
Mix all spices and rub both sides of ribs. double wrap in heavy aluminum foil, seal up like a envelope, make sure its not going to leak. pour in 1 cup apple juice (i used grape juice cuz i had it). i actually made 2 packages each with 1/2 rack of ribs so use half juice in each pack if you do this. seal completely and bake at 375 for 2 hours. then grill with bar b q sauce 15 minutes. easy. i bake them in a big turkey pan. they are very hot and steamy when you open them to put them on the grill if they didn't leak. be careful.
Bar B Q sauce
1 cup ketchup
1/2 cup A1 sauce
1/2 cup brown sugar
3 tablespoons cider vinegar
Mix in small pan, bring to a boil, simmer for 3 minutes.

Cole slaw
dressing:
1 1/2 cup mayonnaise
3 tablespoons sugar
3 tablespoons cider vinegar
1/2 teaspoon salt
1 teaspoon celery seed
I use bagged coleslaw from the store. To it I add dried cranberries, cherries, blueberries, raisins, etc. There are bags of mixed dried berries in the produce section and they vary in contents. I put it all in a big bowl and add the dressing a little at a time and mix. Its easy to get too much and easy to add more if needed. I usually make it at least a couple of hours before I serve it so that it has a chance to “get married” as my grandmother used to say. Check to make sure it has enough dressing just before you eat it. I hope you enjoy it.

stinky bread from the sweet potato queens
1 cup butter, smooshed
1-2 cloves garlic
1 tsp dried basil
2 tablespoons capers, chopped tiny
mix this stuff. take loaf French bread, cut crust off top and sides, but not bottom. cut slices 1 inch thick but not thru bottom. put loaf into foil “boat” bringing up sides but not covering top. put mozzarella cheese between each slice. slather loaf with butter mixture, top and sides and bake under broiler til crispy and brown.
now, I only used half that much butter, it was just way too much. I also didn’t use capers, didn’t have them. use any herb that makes your sneakers squeak. use any cheese you like. it’s a very versatile idea.
