Howdy, y'all! A new custom we've established is that the first Sunday each month is something fun, non-serious, and chat-ish. Tonight is sharing simple recipes- the sort everybody wants when time is short, stress is elevated, and you just have to have food before you collapse.
This is also a good time for our newer members and lurkers to get to know KosAbility and the rest of us, so let's make them comfortable when they make an appearance.

KosAbility is a Sunday 7 pm eastkost/4 pm leftkost volunteer diary series as a community for people living with disabilities, who love someone with a disability, or who want to know more about the issues. Our use of "disability" includes temporary as well as permanent health/medical conditions, and small, gnawing problems as well as major, life-threatening ones. Our use of "love someone" extends to cherished members of other species.
Our discussions are open threads in the context of this community. Feel free to comment on the diary topic, ask questions of the diarist or generally to everyone, share something you've learned, tell bad jokes, post photos, or rage about your situation. Our only rule is to be kind; trolls will be spayed or neutered. If you are interested in contributing a diary, contact series coordinator postmodernista.

For a lot of years at my house, there were small children and full-time jobs, and on many occasions, that made making dinner a non-welcome that just had to be survived. The simplest thing I ever found that really felt like a meal without hassle was Southwest Chili:
1 can each whole kernel corn (drained), whole black beans (not drained), and Rotel™ or similar diced tomatoes and chilis
1 packet powdered taco or chili seasoning, doesn't matter which
1 lb. ground hamburger meat, browned
Throw this all together and serve over rice or the grain of your choice, or none at all, top with shredded cheese or not, 1 pot from start to finish.
