Do You Like Stuffing ?
No, no, no … not stuffing the verb, as in stuffing yourself, I mean stuffing the noun as in bread stuffing, or dressing, or whatever you call it. We love the stuff at our house. I suppose it started, like so many dishes, as a way
to use up leftovers, in this case leftover bread. Everybody has a family recipe. We like ours so much that we thought it was a shame to have it only once a year on the Day Before Shopping. So I started messing with it, trying to make something we could have every now and then with a roast chicken, to take the place of potatoes. I notice somebody at Huffington Post had a similar idea which they put up a couple of weeks ago, Stuffing Matrix. I’ve been experimenting with stuffing for nearly a year now. Ours is a Cornbread and Sausage Stuffing. Here’s the original recipe as received from the Greatest Generation:
Cornbread and Sausage Stuffing
Make some cornbread a day or so before, save half of it.
Slice some French bread and leave it out overnight to dry.
Cook some sausage, reserve.
Make bread mixture, 50/50 cornbread & dried French bread.
Sweat some onion and celery in a stick of butter.
Pour the softened aromatics into the bread mixture.
Add sausage, fresh sage and parsley.
Season with salt and pepper.
Regulate consistency as required with chicken stock.
That was the basis for my various interpretations. That’s a lot of butter, no ? I cut that in half right away. We don’t stuff the stuffing in the bird, we cook it separately. I stuff some onion, celery and sage in the cavity of the bird. Sometimes I don’t even do a whole chicken or turkey. I just brown off some chicken thighs and nestle them in the stuffing before it goes in the oven. For my variations on the theme I keep the cornbread and sausage elements and change the type of sausage I use, and the herbs. Celery and sage are reserved for Thanksgiving because , to me, the smell of onion and celery softening in butter is the essence of that holiday.
My favorite way to roast a chicken is with rosemary and garlic so that’s what I started with. I used the same sausage, the store-bought stuff in the chub, only I substituted the Hot kind for the Sage flavored stuff. I pressed a couple of cloves of garlic into the butter, now only a pat of butter and some olive oil, along with the onion. I used rosemary instead of sage, of course. It came out pretty good the first time but I learned that you really have to put in a lot of rosemary. Italian stuffing was a natural thing to try using Italian sausage, garlic and basil. That was good too. I also tried Mexican stuffing using chorizo, dried Mexican oregano and, again, garlic with the onion. I mixed the chorizo 50/50 with plain ground pork since chorizo is really strong and will take over anything you put it in.
All of these attempts were more or less successful and we now have stuffing several times a year. I’ll do the traditional one Thursday, I’m making Chili & Cornbread tonight so we’ll have leftover cornbread. How ‘bout you …
