Well, maybe it’s more of a loaf cake. Like banana-nut bread, it sort of straddles the categories. I treat it as cake. This recipe makes one loaf.
Begin by greasing and flouring a loaf pan well.
2 cups flour
1 cup sugar (Splenda works)
1 tablespoon baking powder
¼ tsp. baking soda
1/3 cup cocoa
(optional: 6 oz mini chocolate chips)
1 2/3 c. milk
1/3 c. oil
2 eggs and one egg yolk.
Mix the dry ingredients. Toss the chocolate chips, if using, with the dry ingredients, before adding the wet. Mix just until combined, and spoon into prepared pan. Bake at 350 for one hour. For a dry texture, cool on a rack. For a moist “soggy” texture (more brownie-like), wrap in aluminum foil immediately and refrigerate til cool.
