Asterkitty calls tacos “the food of the people”, good, honest, comfort food that we love — inexpensive to prepare and very satisfying. Accordingly, we have adopted that phrase around here for taco night. Or for forays to one of the many excellent food trucks in Portland that serve Mexican food. Hey, today it is Cinco de Mayo, an excellent time to talk about tacos and other yummy food that warms the heart as well as the stomach — without too much dent to the wallet.
Our taco nights at home generally feature chicken — a great use for chicken left over from another meal. A little sauteed onion in which to warm the diced chicken meat, add a generous sprinkling of Penzey’s excellent Fajita Seasoning, and we have the basis for a good meal. Ann is in charge of heating the corn torillas, and Kitty and I grate the cheese, chop some onion, cilantro, tomato, avocado for garnish. A little bowl of salsa, a wedge of lime, and voila!
