I've brought a few crockpots of soups to go on the potluck table.
Audrey's Carrot Soup
2 cups cut carrots
1 cup sliced zucchini
1 quart chicken stock (or vegetable stock)
Salt and pepper to taste
½ tsp. nutmeg
½ to 1 cup heavy cream (vegans try coconut cream!)
1 Tbsp. lemon juice
[Carrots vary in flavor. A Tbsp. or two of honey may also be nice.]
Cook vegetables soft and puree them well. Season, and add the lemon juice. Drizzle cream in the serving bowls to make pretty patterns.
Chicken Peanut Stew
2 onions sliced
2 carrots, peeled and chopped
3-inch piece of ginger, peeled and minced
2 bay leaves
¼ tsp. white pepper
4 cups water
2 lbs. boneless skinless chicken thighs, cut in quarters
2 cups roasted peanuts
3 Tbsp. olive oil
2 baking potatoes, peeled and cubed
1 can diced tomatoes
1 tsp. salt
1 pound fresh spinach, cut up
Bring first seven ingredients to a boil and simmer 20 minutes. Grind one cup of the peanuts. Remove the chicken pieces and set aside, scoop out the vegetables into a blender, discard bay leaves, and puree vegetables. Heat the oil and fry the potatoes until golden brown. Add the chicken pieces and brown them too. Add the vegetable puree and peanut puree back to the broth and stir well. Add the whole peanuts, chicken and potatoes, tomatoes, and salt. Simmer until heated through, add the spinach until wilted.
Over in the side room, there's a bit of light dinner music.
But out on the lawn, we can boogie to our hearts' content.
We even have perfect virtual weather for it.
Hey, as long as we’re in virtual mode, I hope you brought your swimsuits!
And all our favorite critters are here to join the fun.
PWBPeeps is a group that posts a daily diary and nightly open thread for animal lovers. We share photos, seek & give advice about pet health and behavior issues, support each other in times of sadness and stress, celebrate together when times are good, and on most days have an inordinate amount of fun.
You are welcome to join us!
Here are few not-too-onerous PWB rules
- Do not “Troll” the Pootie Peeps Diaries. If you don’t like animal diaries, there’s no need to tell us about it. Just go find some other diary more to your liking.
- Whatever happens in the outer blog STAYS in the outer blog. This is a place to relax and play; please treat it accordingly.
- If you would like a pic from the comment threads, please ask the poster. He/she may have a copyright to those pics. Many thanks!
- There are some pics we never post: snakes, creepy crawlies, any and all photos that depict or encourage human cruelty toward animals. These are considered “out of bounds” and will not be tolerated.
- If you’re not sure about an issue...please ask. Someone is always glad to help.
This is an open thread.
