I've been having discussions with a friend at work about improving my overall health. One of the things we talked about is cleaning up diet.
So I'm hoping he doesn't see this diary. He is a reader here at the GOS...
In my defense, at least my macaroni and cheese is home made. And there is where we'll stop touting its healthiness. Because really? It's full on comfort food. It takes longer than Kraft to make, but dang the extra time is worth it. It's so much better it's not even in the same league. And overall, it's pretty easy. From putting the pasta water on to boil until the macaroni and cheese comes out of the oven, the entire thing takes about 35 minutes. Obviously while the water is heating, you're doing prep work.
So join me as this:
Becomes comfort food!
Bring 4 quarts of water to a boil and then add 1 lb of macaroni (with salt if you want. The recipe calls for 1 tbsp.) While water is boiling, I make the topping - tear up six pieces of white bread and process it with 3 tbsp of butter (chopped up) in a food processor - roughly 10 one second pulses. Set aside.
I grate the cheese and measure out the rest of my ingredients. Here's what goes into the sauce:
So first you make sort of a roux - melt 5 tbsp butter, and add 6 tbsp flour, 1 1/4 tsp dry mustard, & 1/4 tsp cayenne pepper. Stir for a minute or so.
It'll bind up fast, and it smells really good.
Gradually whisk in 5 cups of milk (any kind is fine.)
BRING TO A BOIL!!!! Then reduce heat and simmer, whisking occasionally, for 5 minutes. Remove from heat and add cheeses & 1 tsp salt.
Add macaroni and heat over medium low for about 5 minutes.
Transfer to casserole dish
Top with bread crumb mixture
And put on lower middle rack of oven set to broil. Broil for 3 minutes, turning halfway through.
Apply to face!
