The whole smoked chicken that I diaried a long time ago is my very favorite thing to do with a chicken; here are a couple other good ones.
Chicken Fricassee
I improvised a recipe and called it Fricassee because I like the word. When I looked I was gratified to see it was actually pretty similar to Joy of Cooking's recipe. While not mandatory, for me this will always be Chicken With Noodles.
1 chicken cut in serving pieces
2 tb oil
1/2 cup flour
1 cup chopped onion
1 cup chopped celery
1/2 lb mushrooms, cleaned and sliced
1 cup chicken broth
1 tsp dried thyme
1 tsp dried rosemary or 1 tb minced fresh rosemary
Season flour with salt and pepper. Dredge chicken pieces in seasoned flour. Heat oil in a skillet or heavy saute pan over medium-high heat. Brown chicken on all sides. Remove chicken to a plate. Saute onions and celery a few minutes until softened. Add mushrooms and cook a few more minutes. Add chicken broth and herbs. Return chicken to the pan. Reduce heat, cover and simmer until done, about 30 minutes.
Very Easy Chicken
The original recipe that inspired this is even easier: put salsa in a baking dish, put chicken on top, bake 45 min. I prefer browning the chicken first then finishing in the oven.

1-1/2 cups fresh salsa
1 tsp dried oregano
Preheat oven to 400F. Heat oil in a skillet over medium-high heat. Season chicken pieces with salt and pepper.
Brown chicken on all sides. Add salsa and oregano, cover, bake until done, about 30 minutes.
