I’m not planning or expecting the whole pig for dinner, but today I’m attending a birthday party for a friend who once served me one, which gave me a badly needed idea for this diary.
For that event, Jim had discovered that Costco sold whole roast pigs. Fully cooked, stuffed Italian style with garlic and herbs, frozen, heat and serve. The enormous piece of meat served as an excuse for buying an enormous new bbq grill to heat it on, and of course for inviting the whole family and 50 or so friends. He did not adequately plan for transferring 40 pounds of hot pig in one piece from grill to table, but we managed to not drop it. It was fucking awesomely delicious. If you can afford to entertain 50 or more carnivorous friends I highly recommend it.

A couple years ago an adventurous group brought a pig to the Big Game tailgate near me, starting with the uncooked pig and roasting it all day. In the background you can just see the cooker, a wooden box with a metal top. The pig goes in the box then you build a charcoal fire on the metal top. You can also see how little is left of the pig by by the time I got there.

Or you can just hire a bbq restaurant to bring the pig to you. This place unfortunately doesn’t have a good picture of their “50 foot long Pig-Rig”, but I can tell you it’s impressive. They brought it to a local parade some years ago, with fire burning and a couple of pigs spitted, and I was in the marching band that was following them. Oh, the aroma! In between songs we were chanting “We want the pig! Give us the pig!”

I don’t have any plan for dinner now. The afternoon party will probably have snacks and cake and I might stop and eat on the way home.
