So, the shutdown. I received my February food stamps on Jan 18th thanks to someone quick on the uptake working for the Oregon state government. I was pretty successful stretching out my benefits until this past week. I found myself with a few days of not having any defrosted meat or fresh vegetables. My dry goods (pasta & rice) were pretty low. I only had 4 eggs and some milk left and a pie shell in the freezer. And, I had onions, a whole bag of yellow thanks to the holiday food box I received last year.
I got online and found a possible answer for 4 meals.
Caramelized Onion Quiche
Ideally-
6 eggs
2-3 large red onions
2 TBSP Olive Oil
2 tsp balsamic vinegar
¾ cup milk
¼ cup heavy cream
6 oz. Gruyere cheese, grated ( 1 ½ cups)
pinch nutmeg
salt & pepper to taste
Pie shell
Slice the onions lengthwise and place in a skillet with the olive oil ( I also use about 1 TBSP of butter) cook over medium heat, stirring occasionally, about 10 minutes. Reduce the heat to medium low and continue cooking for another 40 minutes, stirring until they’re nice and brown. Add the balsamic vinegar and cook 10 minutes more.
Assemble the Quiche-
Place the pie shell on a cookie sheet and sprinkle ½ of the cheese over the bottom.
Add the onions and sprinkle remaining cheese.
In a medium bowl, whisk together eggs, milk, cream and add the salt, pepper and nutmeg. Pour over the quiche.
Bake at 350F for 30-35 minutes. Allow to cool for 10 minutes before slicing.

I only had sharp cheddar to use and it was only okay, but I’m sure it tastes better if you’re able to follow the recipe with the correct ingredients.
Tonight for dinner, thanks to aoeu for telling me my snap benefits came early this month, I raced out to Winco and bought groceries and am eating chicken tenders. What’s for dinner at your house?
