This dinner wasn’t planned as a diary, but it looked so good when it came out of the oven that I couldn’t resist taking a picture. Might as well write it up :) It’s not really a recipe, just a very basic idea that came out exactly like I wanted.
My pictures show half a chicken; there are no critical measurements in this recipe, buy the number of servings you need and adjust appropriately.
Baked Chicken
serves 4
1 chicken, cut into 8 serving pieces
salt
ground black pepper
cooking oil
½ cup water, wine, chicken broth, or some combination
1 large onion, chopped
2 carrots, cut into sticks
2 stalks celery, cut into sticks
1 teaspoon dried thyme
1 bay leaf
Preheat oven to 375 F.
Coat the bottom of a large baking dish with 1 tablespoon oil. Add the onion, carrot, celery, thyme, bay leaf, and ¼ cup broth or water.
Heat 2 tablespoons oil in a large skillet. Salt and pepper the chicken pieces. Brown chicken on all sides, 5 to 10 minutes. Add chicken to the baking dish on top of the vegetables.
Deglaze the skillet with ¼ cup wine or water or broth. Pour this into the baking dish, cover the dish, and bake 45-50 minutes. Check the thicker pieces for doneness and cook longer if necessary.
The pan juices should taste really awesome and you might want to thicken them into gravy. Serve with something to pour gravy over.
