Human beings are social animals. We like to be around other people, to get out, to see new sites, and have new experiences. We are also beings who like the five senses: sight, sound, taste, touch, hearing. With concern over the Coronavirus, it is easy to worry and feel trapped into a location.
Our mind needs a chance to take a break and pause, not thinking about things that are dire, but thinking about things we personally enjoy. And who doesn’t enjoy eating?
This weekend, I went to the grocery store and was surprised at how raided the store was of key items. Still, I was able to piece together some easy items that are available in most locations that can start a quick and easy meal.
Mixed Fajitas
Everyone is familiar with traditional fajitas. I keep working on changing them up to make them different, and over the years, I finally found a recipe that I really like that is definitely out of the ordinary.
Some components are traditional: sliced chicken, fajitas. I use Red & Yellow peppers sliced thinly and a thinly sliced white onion. I take the vegetables and sweat them with PINEAPPLE juice and fajita spices of your choice. In another skillet, I cook up the chicken to get it ready to go into the mix of vegetables.
Once you’ve done this, combine the two together. Now, add some pineapple pieces or chunks thinly sliced up, and you will mix those in for less then 30 seconds — this happens at the very end. Now, you are almost done.
After warming up your tortilla (I use a microwave with a glass of water in a corner to make them nice and soft) put sour cream on one side of your fajita, lay down the mix of meat and vegetables you have.
If you have: Slice kiwi into small slices, and add kiwi slices to the top of your fajita, close it up and BOOM, you have a meal!
