Cajun Spice Mix
4 teaspoons paprika
2 teaspoons salt
2 teaspoons garlic powder
1 teaspoon fresh ground black pepper
1 teaspoon white pepper
1 teaspoon cayenne pepper
2 teaspoons mustard powder
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon cumin powder
Mix everything together well. Store in a jar with a lid.
Makes 20 servings
Cajun Baked Catfish
1 1/2 pounds Catfish fillets or other fish of your choice
1 cup cornmeal
1 tablespoon Cajun seasoning
2 whole eggs beaten
1 teaspoon Tabasco or other hot sauce
Vegetable oil spray
Heat the oven to 425°F. Spray a 13x9x2 casserole dish.
In a plate mix the cornmeal and Cajun seasoning together. In a second plate mix the eggs and hot sauce.
Rinse and pat dry the fish.
Dip the fish in the egg mixture. Let the excess drip off.
Put the fish in the cornmeal. Pat on a coat to cover the fish.
Put the fish in the prepared dish.
Bake for 15 minutes turning once.
Makes 4 servings
Old Bay Seasoning
1 tablespoon celery seeds
2 tablespoons ground bay leaves
2 teaspoons dried mustard
1 teaspoon fresh ground black pepper
1 teaspoon paprika
1/2 teaspoon ground ginger
1/2 teaspoon ground cardamom
1/4 teaspoon ground mace
1/4 teaspoon cayenne pepper
1/8 teaspoon ground cloves
1/8 teaspoon white pepper
1/8 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/8 teaspoon crushed red pepper flakes
Mix everything together well and store in a jar with a lid.
Makes 20 servings
Seafood Bisque
16 ounces white fish fillets such as bass or snapper
1 medium shallot minced
4 cups low sodium chicken broth
1 cup heavy cream
2 tablespoons butter
4 tablespoons all purpose flour
1/4 cup sherry
1 teaspoon seasoned salt
1/4 teaspoon seasoned pepper
2 tablespoons tomato paste
1 teaspoon Old Bay Seasoning
1 clove garlic minced
Melt the butter in a large saucepan or Dutch oven over medium high heat. Add the shallots and cook for 3 to 5 minutes or until softened and starting to brown. Add the garlic and cook for 30 seconds.
Add the tomato paste and flour and cook for 1 minute.
Add the salt, pepper and Old Bay. Mix well.
Add the stock and bring to a simmer. Add the fish and cook for 5 to 7 minutes or until the fish is cooked through.
Add the cream and heat through.
Makes 4 servings
Italian Dressing
1/2 cup olive oil
1/4 cup white wine vinegar
1 teaspoon Dijon mustard
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/8 teaspoon celery seeds
1/4 teaspoon onion powder
1/4 teaspoon garlic salt
1 tablespoon honey
Mix everything together well and store in a jar with a lid.
Makes 6 servings
Italian Panini Sandwiches
2 whole Italian Hoagie rolls
2 tablespoons Italian Dressing
1 small red onion thinly sliced
2 slices Provolone cheese
2 slices deli ham
2 leaves Boston lettuce
1 medium Roma tomatoe sliced
2 slices salami
2 slices mozzarella cheese
2 slices turkey breast
2 tablespoons mayonnaise
Split the rolls open vertically. Put the Italian Dressing on one side of the roll and the mayonnaise on the other side.
Add the meats and cheeses to the bottom of each roll. Top with the tomatoes.
Put the lettuce on top of the tomatoes.
Put the bun top over the lettuce.
Makes 2 sandwiches
Watermelon Salad
5 cups watermelon cubed
1 small red onion thinly sliced
1/2 cup feta cheese crumbled
1 large cucumber diced
3 tablespoons olive oil
1/2 cup mint leaves torn
1 tablespoon lime juice
1/4 teaspoon salt
In a large bowl add the watermelon, red onion, feta cheese and mint leaves. Toss together.
In a small bowl mix the olive oil, salt and lime juice together.
Add the dressing to the watermelon and mix well.
Makes 4 servings
Veggie Burgers
30 ounces black beans drained
1 small onion diced
3/4 cup panko
1 whole egg
1 teaspoon seasoned salt
1/4 teaspoon seasoned pepper
1/2 pound mushrooms minced
1/2 teaspoon paprika
1/8 cup mayonnaise
Add all of the ingredients together and mix well.
Form into 6 patties.
Grill or fry over medium high heat for about 3 minutes per side.
Makes 6 servings
