Hello everyone. I don’t have much of a diary for you this week. I hope vou were lucky enough to have off both Thursday and today. My classes are cancelled and my husband is working from home today but my son had to get up at 5am and go off to work this morning.
Summer is really here now and it got me thinking about that all time favorite kids summer treat — the popsicle. I found a couple videos online for how to make low carb popsicles so you can treat yourself when it’s hot.
If you don’t do strawberries you could always swap for red raspberries for the red layer. I loved bomb pops when I was a kid.
These are a little fancier but seem easy enough.
These are standard fruit flavored popsicles. You can get molds online or at your local Dollar Store.
