Hey. I thought that in the spirit of the season I would share a recipe I enjoy making. It will be the grande finale of the Christmas Dinner I will be having with friends tomorrow. I hope this diary finds everyone in good health and good spirits. :) Merry Christmas to all of y'all. Chocolate Coconut Christmas Pie
Filling:
10 oz bittersweet chocolate chips
1/4 cup sweetened condensed milk
4 tbs butter
3/4 cup finely chopped walnuts
4 eggs beaten
2/3 cup sugar
5 oz white chocolate chips
1 tsp vanilla extract
Crust
2 1/2 cups coconut
1 tsp cinnamon
1/2 tsp nutmeg
2/3 cups condensed sweetened milk
1/3 cup flour
1 egg beaten
- Preheat oven to 325 degrees and either grease a 9" spring form pan or line it with parchment paper. (I suggest the parchment paper, as the crust can be very sticky.)
- To prepare the crust combine coconut, flour, cinnamon and nutmeg in a large bowl. Toss with a fork until the flour and spices are equally distributed.
- Add condensed milk and beaten egg. Mix thoroughly and then press evenly into bottom of spring form pan.
- Bake the crust for 10 minutes, then remove from oven. Cover evenly with white chocolate chips and return to the oven for five minutes. Remove from oven and, using the back of a spoon, smooth the melted white chocolate evenly over the crust. Set aside while you make the filling.
- Increase temp of oven to 350 degrees
- Place bittersweet chocolate, butter and condensed milk in a metal bowl over a pan of simmering water. Stir occasionally until mixture is smooth and combined.
- Remove chocolate mixture from heat and add beaten eggs and sugar. Mix thoroughly and then stir in the walnuts.
- Pour filling into spring form pan and return the pan to the oven. Bake for 30 - 45 minutes, until the center of the pie is set.
