I've eaten a vegetarian diet during several periods in my life , and I'd like to get back to it. Complicating matters is that I'm the cook for my small family of three. Hubby still likes his meat, and the 10yo is both picky and adventurous by kid standards (she'd eat tacos every day if I'd let her). I really don't want to cook three separate meals.
As grill season is almost upon us (as soon as the time changes), my turn in the kitchen will be thankfully reduced to veggie prep. We eat almost any veggie raw, grilled or steamed, but so far they have been discrete dishes: a plate of tomatoes, a dish of asparagus, a bowl of cauliflower or broccoli. I prefer a mixture of vegetables, but haven't found any recipes we all like. I also haven't found recipes that could serve the dual purpose of entree for me and side-dish for the family. I envision a dish of whole grains, a protein source and a few vegetables. A risotto perhaps. Some savory beans. My old vegetarian cookbooks are hardly healthy food, but I suspect that that's changed in the last 10 years.
We can't be the only family with this situation. How has your family solved this problem? What are your favorite recipes or cookbooks?
