It's 6:40AM on a Saturday right now, time for breakfast!
Ingredients:
1 C. Milk
4 Large Eggs
1 tsp
Vanilla (to taste)
2 T. Butter
1/2 C. Flour
1/2 tsp Baking Powder
Dash Salt
1 T. Sugar
1/8 tsp Fresh ground Nutmeg
1/2 C. Sugar
1/2 tsp Cinnamon
1/8 tsp Fresh ground Nutmeg
3 T. Unsalted Butter
1/2 C. Fresh or frozen Cranberries
1 Apple (Granny Smith is good choice)
Directions:
Preheat oven to 425F degrees.
Mix first 4 ingredients and then add next 5 ingredients and mix well.
Let stand for about 10 or 15 minutes.
In a separate bowl mix 1/2 cup of sugar, 1/2 tsp cinnamon & 1/8 tsp of nutmeg.
and put that off to the side.
Peel and slice apple.
In oven proof skillet or cast iron, melt 3 T. of unsalted butter and sprinkle 1/2 of sugar mixture over butter. Spread evenly sliced apples and cranberries, cook for 5-10 minutes.
Add batter to skillet and place in oven for 15 min.
Reduce heat to 375F and cook for 10 minutes. Pancake is done when it gets very puffy.
Serve with Maple Syrup & Real whipped cream.
